make shift dinner

Sometimes dinner can be an ordeal, especially as a college student. but this evening I rummaged through the fridge and invented a tasty (and healthy) dinner.


I started with boiling up some quiona (a whole grain rice substitute) for the base of my stir fry
(I got inspired to use quiona from a blog I follow called clicked and captured)

For flavor I chopped a small orange and a bit of red bell pepper and mixed it into the quiona with a pinch of sweet corn

I topped the base with salsa from a jar and seared beef tips with a bit of freshly shredded cheese for that added kick


The end result combined a sweet and spicy combo rich with different flavors. It just goes to show you: anything can be dinner.
