At the end of the day, I often find it very hard to cook dinner. I generally mull through take out menus in hopes of finding something that catches my eye. But more often than not, I'm put off by the high prices of ordering in and the high calories of each meal, so I resort to pulling something together myself. This is exactly what happened to me last night. I resisted the urge to order sushi and pulled a recipe from a magazine page. The meal: Spaghetti Aglio Olio; a traditional Italian dish. I found it surprisingly easy to pull together (in under 20 minutes) and I found I had all the ingredients already in my cabinets.
To make this recipe, start with these very simple ingredients: 3 cloves of garlic, crushed red pepper, olive oil, and spaghetti noodles.
Boil the noodles in salted water.
In a small pan, heat the oil (about 4 tbls).
Add the chopped garlic tossing often so it doesn't burn.
After a minute, add the crushed red pepper.
When the spaghetti is cooked though, transfer it to the pan and add a ladle of the pasta water (this helps to marry it all together).
Toss the pasta with the oil until it's completely covered.
Top with parmesan cheese and parsley.
This dish is satisfying, a little spicy (from the red pepper) and very tasty. Best of all, it's super easy. Enjoy!
